Pesto Chicken & Vegetable Bake

Prep time: 15 minutes

Cook time: 45-50 minutes

Chicken & Vegetable Ingredients:

  • 2 chicken breasts, cubed
  • 1 yellow onion, chopped
  • 1 large sweet potato, cubed
  • 2 cups spinach
  • 25-30 green beans, sliced in half
  • 3 tbsp hemp seed

Pesto Sauce Ingredients:

  • 1 bunch basil
  • 1/2 lemon juiced
  • 3 tbsp nutritional yeast
  • 2 tbsp sunflower seeds
  • 1 clove garlic
  • 1/4 cup avocado oil
  • Pinch salt

Directions:

  1. Preheat oven to 375F.
  2. In a large boxing bowl combine chicken, onion, sweet potato, spinach and green beans.
  3. In a food processor blend together basil, lemon juice, sunflower seeds, garlic, avocado oil and salt.
  4. Pour the sauce over and chicken and vegetable mixture. Mix well so all pieces are coated.
  5. Transer to a large casserole dish and sprinkle with hemp seed.
  6. Bake for 45-50 minutes until the chicken is fully cooked and the sweet potatoes are softened.
