Grainless Gingerbread French Toast



This is the perfect breakfast treat to make for brunch over the holidays. All you need is 10 minutes + a loaf of my Grainless Gingerbread + a few other ingredients.

 You can even make the loaf ahead of time for a quick and easy breakfast. This recipe is gluten free, grain free, dairy free, paleo, vegetarian, soy free and refined sugar free!

Grainless Gingerbread French Toast

Makes: 4-5 Servings

Prep time: 1hr 10 minutes

Cook time: 10 minutes

Gingerbread Loaf Ingredients:

French Toast Ingredients:

  • 2 tbsp butter or avocado oil

  • 3 eggs

  • 1/2 cup unsweetened almond milk

  • 1 tsp cinnamon

  • ½ tsp nutmeg

Topping:

  • 2 tbsp butter

  • ½ cup pure maple syrup

  • Pomegranate seeds (optional)

 Directions:

  1. Heat a skillet with butter/oil on medium heat.

  2. Slice loaf into 10- 12 even pieces.

  3. In a small mixing bowl combine eggs, milk, cinnamon and nutmeg.

  4. Dip each piece of bread in egg mixture fully coating both sizes.

  5. Place in skillet and cook on medium-low for 3-4 minutes on each side until golden.

  6. Top with butter and maple syrup.
