Grainless Double Chocolate Muffins

 I haven’t posted a new muffin recipe for quite awhile because my last two recipe creation attempts were a complete fail. One recipe was too mushy and the other just crumbled apart. I’ve learnt from my mistakes and now have this super fluffy and delicious recipe for you, with a secret ingredient – avocado! This recipe is gluten free, dairy free, paleo, vegetarian, soy free and refined sugar free.


  • ½ cup almond flour

  • 1/3 cup cacao powder

  • 1 tsp baking soda

  • 1 tsp baking powder

  • ¼ tsp salt

  • 1 ripe avocado, mashed

  • 1 banana, mashed

  • 1/3 cup honey

  • 2 eggs

  • 2 tbsp coconut oil


  1. Preheat oven to 375F. Line a muffin pan with muffin cups or grease well with coconut oil.

  2. Combine all dry ingredients in a mixing bowl – almond flour, cacao powder, baking soda, baking powder, salt.

  3. Combine all wet ingredients in another mixing bowl- avocado, banana, honey, eggs, coconut oil.

  4. Pour wet ingredients into dry ingredients. Mix well, but don’t over mix.

  5. Fill each muffin cup ½ full with batter.

  6. Top with your favourite toppings – ie, cacao nibs, chocolate chips, nuts, seeds, etc. (I used cacao nibs and pecans).
