Classic Mussels

Want to really show your Valentine how much you care?  Then you have to make this recipe! These mussels only require one pot and are ready in under 15 minutes!

3 tbsp avocado oil
1 shallot, minced
2 cloves garlic, minced
1 tbsp white wine vinegar
1 1/2 cups vegetable or chicken broth
1 tbsp lemon juice
Pinch salt
2 lbs fresh mussels, scrubbed and debearded
2 tbsp fresh parsley

In a large pot heat oil, then add the shallot and garlic.
Cook for 5 minutes then add in white wine vinegar, broth, lemon juice and salt.
Bring to a boil. Pour in scallops, shaking the pot generally to cover all in broth.
Turn down the heat to low, place the lid on the pot and steam for 5-7 minutes until all the mussels are open.
Pour scallops and broth into a bowl, sprinkle with fresh parsley before serving.
