3 tbsp avocado oil
1 shallot, minced
2 cloves garlic, minced
1 tbsp white wine vinegar
1 1/2 cups vegetable or chicken broth
1 tbsp lemon juice
2 lbs fresh mussels, scrubbed and debearded
2 tbsp fresh parsley
In a large pot heat oil, then add the shallot and garlic.
Cook for 5 minutes then add in white wine vinegar, broth, lemon juice and salt.
Bring to a boil. Pour in scallops, shaking the pot generally to cover all in broth.
Turn down the heat to low, place the lid on the pot and steam for 5-7 minutes until all the mussels are open.
Pour scallops and broth into a bowl, sprinkle with fresh parsley before serving.
