Edamame Salad with an Apple Cider Vinaigrette Dressing

I’m always trying to come up with simple snacks & meals that can be prepared ahead of time for the week. This Edamame Salad is perfect to add to your weekly meal prep. Edameme is one of my favourite plant-based proteins- its super tasty plus, 1 cup contains 17 grams of protein, 8 grams of fibre and only 189 calories! This salad stores well in the fridge and only takes 15 minutes to make! This recipe is gluten free, dairy free, vegetarian, vegan, nut free and refined sugar free.

Edamame Salad with an Apple Cider Vinaigrette Dressing 

Ingredients:

Salad:

  • 3 cups frozen edameme, shelled and thawed

  • 3/4 cup tomatos, chopped

  • 3/4 cup red onion, chopped

  • 1/2 cup green pepper, chopped

  • 1/2 cucumber, chopped

  • 1/2 cup parsley, chopped

Dressing:

  • 1 1/2 tbsp fresh lemon juice

  • 1 clove garlic, crushed

  • 1 tbsp dijon mustard

  • 2 tbsp raw honey

  • 1/4 cup apple cider vinegar

  • 1/3 cup avocado  oil

  • 1/8 tsp pink Himalayan salt

Direction:

  1. Combine all salad ingredients in a mixing bowl.

  2. In a smaller bowl whisk together all dressing ingredients.

  3. Once dressing is well blended pour into salad bowl. Mix well.

  4. Store salad covered in fridge.
