To all my dairy free, paleo, vegan friends, when was the last time you had a good alfredo sauce? I’m sure its been awhile! Whether you stay away from dairy or you’re just looking for lighter meal alternatives this alfredo sauce is perfect. It contains 8 simple ingredients and is oh so creamy! It’s sure to be a hit with the whole family. You could even switch it up by adding in veggies, chicken or shrimp. Pair it was grainless pasta, zoodles, spiralized sweet potato etc. I used Pastatucci‘s Chickpea & Sweet Potato grainless-vegan pasta. This recipe is gluten free, dairy free, paleo, nut free, soy free and vegan.
Grainless Alfredo Sauce Ingredients:
1 tbsp avocado oil
1 onion, chopped
3 cloves garlic, minced
1 large head cauliflower, loosely chopped
1 cup vegetable broth
1 cup any non-dairy milk
2 tbsp nutritional yeast
1 tsp himalayan salt
1/4 tsp pepper
1 tbsp tapioca starch
Fill a large pot with water and bring to a boil.
Heat a skillet on stove top. Add in oil, onion and garlic. Sauté for about 5-7 minutes until the onions are transparent. Set aside.
Once the water boils add in cauliflower. Turn down to medium heat and cook for 7-10 minutes until you can easily put a fork through each piece.
Blend onion, garlic, cauliflower, vegetable broth, milk, nutritional yeast, salt, pepper in either a food processor or blender until completely smooth.
Pour back into skillet. Add in tapioca starch, Stir in well.
Bring to a boil, turn down heat to medium-low and stir for 3-5 minutes until it thicken a bit more.
Mix with your favourite pasta and serve!
