Enjoy banana bread without the grains! This grainless Banana Nut Bread is perfect if you’re looking for a high protein, low sugar snack. During the week I’m not a big breakfast eater, so it’s nice to have a piece on hand when that mid morning hunger kicks in. It’s naturally sweetened with banana (the only way that would change is depending on the type of powder you use). Banana Nut Bread Recipe
2/3 cup RootzNutrition Banana Nut Paleo Protein Powder
1/2 cup tapioca starch
1/3 cup almond flour
1 tsp baking powder
2 tbsp ground flaxseed
1 tbsp cinnamon
1/2 tsp salt
1 cup almond milk
2 very ripe bananas, mashed
3 egg whites or flax eggs
1 tsp vanilla extract
1/4 cup walnut pieces
Preheat oven to 335F. Lightly grease a bread pan or line with parchment paper.
In a large mixing bowl combine protein powder, tapioca starch, almond flour, baking powder, flaxseed, cinnamon and salt.
Add in almond milk, bananas, eggs and vanilla. Mix until blended, then stir in walnut pieces.
Pour batter into bread pan and bake for 40-50 minutes or when an interested toothpick comes out clean.
