Who says grainless + healthy eating has to be boring?! People often assume that maintaining this kind of lifestyle is very limited to bland food. That’s definitely not the case and is one of the main reasons why I created Going Grainless. I want to give you guys inspiration to make healthy, yet flavourful meals that don’t make you miss all of the “bad” and processed foods out there.
These are gluten free, vegetarian, nut free, soy free and refined sugar free. I’ve also listed modifications in the recipe to make it dairy free, paleo and vegan!
Buffalo Cheddar Cauliflower Bites Recipe
- 1/2 head cauiflower
- 1 cup old cheddar cheese (shredded)- You can omit the cheese if you want a dairy free/paleo/vegan alternative
- 1 egg (or flax egg)
- 1 clove garlic
- 1/2 tsp salt
- 1/2 cup franks hot sauce
- 1 tbsp avocado oil
Preheat oven to 400F. Lightly grease a baking sheet.
Roughly chop cauliflower, then place in food processor. Blend until the cauliflower is in breadcrumb-sized grains.
Pour ground cauliflower into a mixing bowl. Add in cheddar cheese, egg, salt, garlic and hot sauce. Mix well.
Form cauliflower bites by taking 1 1/2 tbsp of “dough”. Form into circular or oval disks and then place on baking sheet. Bake for 10-12 minutes on each side until they are crispy.
Serve with your favourite dipping sauce ie. Ranch, salsa, sour cream, BBQ sauce
