Grainless Buffalo Chicken Bites

I’ve made a few different buffalo chicken recipes, but this one is definitely the best yet. My boyfriend is a big gluten eater, he came back asking for seconds and ate all the leftovers the following day – I’ll take that as a recipe win! This recipe is gluten free, paleo, and refined sugar free.

Grainless Buffalo Chicken Bites Recipe:

 Yields: 3-4 Servings

Prep time: 10 minutes

Cook time: 15 minutes

Chicken Bite Ingredients:

  • ¾ cup tapioca starch

  • 1/3 cup almond flour

  • 1 egg

  • 3 tbsp avocado oil

  • 1 tsp pink himalayan salt

  • 3 tbsp water (add more as needed)

  • 2 chicken breasts

 Buffalo Sauce Ingredients:

  • 3/4 cup franks hot sauce – or your favourite hot sauce

  • 2 tbsp butter, melted

Directions:

  1. Cut chicken into bite sized pieces.

  2. In a large mixing bowl combine tapioca starch, almond flour, egg, 1 tbsp oil, salt and water. Mix well. Add more water in tablespoon amounts as needed. (You don’t want the batter to be too runny.)

  3. Heat a skillet on the stovetop and add in remaining oil.

  4. Coat chicken pieces with batter. (I found it easiest to use my hands to coat it)

  5. Once coated place in skillet. Fry for about 5 minutes on each side until the chicken is fully cooked.

  6. In a small bowl combine hot sauce and butter. Fully coat chicken bites.

  7. Place chicken back in skillet and cook for 1-2 minutes on each side.

  8. Serve with you favourite dipping sauce.
