Grainless Cajun Tomato Lentil Soup

Soup is my favourite food all winter long, especially on this cold rainy day. What I love about soup is you can add almost anything to it – this one was created using up the odds and ends in my kitchen! This #grainless Cajun Tomato Lentil soup is full of flavour and protein that will keep you full for several hours after. I topped it off with raw pumpkin seeds and Oh She Glows All Dressed Kale Chips instead of crackers!

Grainless Cajun Tomato Lentil Soup

Ingredients

  • 1 tablespoon avocado oil
  • 1/4 teaspoon ground pepper
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon paprika
  • 2 tablespoons dried thyme 
  • 2 tablespoons dried parlsey
  • 1 bay leaf 
  • 1 carrot, grated and chopped
  • 2 celery stalks, chopped
  • 2 cups bone broth (or veggie broth)
  • 1 large can crushed tomatoes
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 can lentils

Instructions

  1. Heat a pot on the stove top. Add oil, onion and garlic. Cook for 4-6 minutes until the onions are transparent.
  2. Pour in tomatoes and broth. Then add in celery, carrot, bay leaf, parsley, thyme, paprika, cayenne, pepper flakes, salt and pepper.
  3. Bring to a boil then turn down the heat. Let simmer for 10 minutes, then add lentils.
  4. Transfer soup to a blender/food processor and blend until smooth. Top with your favourite nuts, seeds and crackers!
