Grainless Cauliflower Fried Rice

Grainless Fried Rice Recipe:

Yields: 4-5 Servings

Prep time: 15 minutes

Cook time: 15 minutes

​Ingredients:

  • 1 head cauliflower

  • 4 celery stalks, chopped

  • 1 yellow onion, chopped

  • 2 carrots, chopped

  • ½ cup peas

  • 1/8 paprika

  • ½ tsp sesame oil

  • ½ tsp fish sauce, optional

  • 6 tsp soya sauce

  • 1 clove garlic

  • 3 eggs, scrambled

  • 2 tbsp avocado oil

Directions:

  1. Loosely chop cauliflower, then place in food processor. Blend until it’s chopped up in rice sized pieces. Pat cauliflower with paper towel to remove excess water.

  2. In a large skillet on the stovetop heat oil. Add in onions, celery carrots. Sautee for about 10 minutes.

  3. Add in peas, paprika, sesame oil, fish sauce, soya sauce and garlic, and cauliflower.

  4. Fry for 5-7 minutes. During the last 2 minutes make a hole in the middle of the rice, pour in scrambled eggs and cook. Once eggs are cooked fully mix the rice and eggs together.
