Grainless Chocolate Pumpkin Bars (Raw)

  

These bars are a perfect fall treat that doesn’t require the use of the oven and only takes 15 minutes to prepare. They’re quite sweet, but luckily only sweetened with natural sugars. That being said – no sugar is great for you so it’s all about moderation. What I love about these bars is they store best in the freezer, which makes it super simple to pull out one at a time as your sweet tooth has that craving.
 
This recipe is gluten free, grainless, paleo,  vegan, peanut free and refined sugar free!

Raw Chocolate Pumpkin Bars

Yields: 16 bars (8”x8” baking pan)

Prep time: 15 minutes

 Chocolate Base Ingredients:

  • ½ cup cacao powder

  • 5 tbsp maple syrup

  • ¾ cup ground walnuts

  • 2 tbsp avocado oil

Pumpkin Centre Layer:

  • 1 ¼ cup pitted dates

  • ¼ cup coconut milk

  • 2/3 cup pumpkin puree

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp ground cloves

  • ¼ tsp ginger

Top Chocolate Layer:

Option 1:

  • ¾ cup coconut oil

  • 3 tbsp maple syrup

  • ¼ cup cacao powder

Option 2:

  • 1 cup semi-sweet chocolate chips

Directions:

  1. In a food processor combine all ingredients for the base layer. Blend for 3-5 minutes.

  2. Press base layer into a 8” x 8” baking pan.

  3. Rinse out food processor then combine all ingredients in the centre layer.

  4. Press centre layer into baking pan.

  5. Make top layer.

    1. Option 1: Melt coconut oil then combine syrup and cacao in a small bowl, then pour on top of centre layer.

    2. Option 2: Melt chocolate chips by microwaving in a small bowl for 1 minute. Stir until melted, then pour on top of centre layer.

  6. Place pan in freezer for 2 hours before serving. Store in fridge or freezer.
