Grainless Creamy Chocolate Pudding

You won’t find a better pudding than this for a few reasons- it tastes delicious, it’s full of protein and it promotes a healthy gut! You would never know by eating it, but the gelatin-like texture of the pudding is created from chia seeds.  The “gel” is a soluble fiber and actually works as a probiotic to support the growth of more probiotics in the gut. It is often overlooked but gut health is SO important. With my own gluten sensitivities it took a long time for me to heal my gut after damaging it from all of the gluten I had been consuming for several years. When you have an unhealthy gut, it can affect other parts of your body both mentally and physically, I can definitely vouch for this though my own personal experiences (if you want to learn more about my experiences check out the “About” section on the blog)

Get your digestive system back on track and enjoy some pudding! This recipe is gluten free, dairy free, paleo, vegetarian, vegan, nut free, soy free and refined sugar free.


  • ½ cup chia seeds

  • 2 cups almond milk or coconut milk

  • 3-4 tbsp maple syrup or honey

  • ¼ cup cacao powder

  • ½ tsp vanilla


  1. In a food processor blend chia seeds until they are broken up.

  2. Add in the rest of the ingredients and blend until smooth.

  3. Pour into a air tight container.

  4. Let set in fridge for 1 hour+ before serving.
