Today’s Thanksgiving recipe is Creamy Herb Mashed Potatoes. Traditional recipes call for ingredients like cream cheese and sour cream, which isn’t ideal for anyone who stays away from dairy. These potatoes are extra creamily and lightly seasoned with fresh chives and sage. This recipe is gluten free, dairy free, paleo and vegan!
Creamy Herb Mashed Potatoes Recipe
- 1.5L bag red baby potatoes (with skins)
- 1 cup cashew cream
- 1 tbsp avocado oil
- 3 tbsp chives, chopped
- 3 tbsp sage, chopped
- Salt & Pepper
- Place potatoes in a pot and fill with water. Bring to a boil on the stove top.
- Once boiling turn down head to medium low for 10-15 minute until potatoes are soft then drain out the water.
- Mash potatoes and add in cashew cream, oil, chives, sage, salt and pepper. (Optional: Top with butter or gravy for serving).
