I had a craving for something fried and breaded, but being gluten free I don’t ever eat food like that. This is such a tasty and healthier alternative!
Crispy Asparagus Fries with Lemon Garlic Sauce Recipe
Asparagus Fry Ingredients:
- 1 bunch of asparagus
- 1/2 cup quinoa (uncooked)
- 1 tsp Cajan seasoning
- pinch of salt
- 2 flax eggs (or regular eggs) *See note below
Lemon Garlic Sauce Ingredients:
- 1/2 cup vegan cream cheese (or regular cream cheese) **See note below
- 1 tbsp avocado oil (or olive oil)
- 1/4 of a lemon
- 1 clove garlic (chopped)
Preheat oven to 425F. Line a baking sheet with parchment paper or tinfoil and grease lightly with oil.
Put quinoa in a food processor, blend for 30 seconds or so until the grains are broken up (not so much that it is more like a flour).
In a small mixing bowl combine quinoa, Cajin, and salt.
In another bowl make flax eggs. (or scramble real eggs) *see note below
Cut off the ends of the asparagus. Dip in egg mixture and then quinoa mixture so that they are “breaded”.
Place on baking sheet.
Bake for 5 minutes on each side.
While those are baking, soften the cream cheese in the microwave for about 20-30 seconds. Add in oil and whisk together until chunks are gone. Squeeze in fresh lemon juice and chopped garlic. Mix together.
Once the asparagus fries are golden, remove from oven and serve with lemon garlic sauce
* Flax egg: Whisk together 2 tbsp ground flax seeds and 5 tbsp water until well combined, then place in the fridge to set for 15 minutes until it is a egg yolk consistancy.
** Vegan Cream Cheese: I never thought I would like something like this, but it is so good! It tastes just like cream cheese. The brand I buy is called “Tofutti: Better Than Cream Cheese”. I buy it at Shoppers in Canada, I am not sure where/what brand you would buy in other places.
