Grainless Gingerbread Loaf

It’s that time of year again! I can’t believe its already December and I’m super excited for a whole month of Christmas recipes. This bread is soft, chewy and tastes just like a gingerbread cookie!  You would never guess this bread is grain free, gluten free, dairy free, paleo, vegetarian. soy free and refined sugar free.

Grainless Gingerbread Loaf

Yields: 1 loaf

Prep time: 10 minutes

Cook time: 55 minutes


1 1/4 cup almond flour

1/3 cup ground flaxseed

1/4 cup tapicoa starch

1/2 cup arrowroot starch

1/2 cup coconut palm sugar

1 tsp baking soda

2 tps ground cinnamon

2 tsp ground ginger

1 tsp ground nutmeg

1/2 tsp pink himalyan salt

1 cup unsweetened almond milk or coconut milk

1 tsp vanilla

1/3 cup butter, melted

1/3 cup molasses

3 eggs


1. Preheat oven to 350F.

2. Line a loaf pan with parchment paper or grease well with coconut oil.

3. In a large mixing bowl combine almond flour, flaxseed, tapicoa starch, arrowroot starch, sugar, baking soda, cinnamon, ginger, nutmeg and salt.

4. In another mixing bowl combine milk, vanilla, butter, molasses, eggs.

5. Pour liquid bowl into dry bowl and mix well until smooth.

6. Spoon batter into loaf pan.

7. Bake for 55-60 mins. Then remove from over and let cool on a wire rack.
