Grainless Maple Bacon Sweet Potato Poutine

Maple + Bacon + Poutine = Stereotypical Canadian Food… but really though, if you haven’t had poutine before I’m advising you to try it now! A classic poutine consists of fries, cheese curds, and gravy. For this recipe I’ve created my own breakfast version with crispy sweet potato fries, maple candied bacon and a light hollandaise sauce. This recipe is gluten free, dairy free, paleo, nut free, soy free and refined sugar free.

Maple Bacon Sweet Potato Breakfast Poutine

Makes 2-3 Servings

Fry Ingredients:

  • 2 medium sweet potatoes (sliced into fries)
  • 3 tbsp avocado oil

  • 1/2 tsp salt

  • 1/2 onion (chopped)

  • 1/2 green pepper (chopped)

  • 8 slices bacon

  • 3 tbsp maple syrup

  • 3 eggs

  • 1 green onion (chopped)


  • 2 egg yolks

  • 1/2 lemons juice

  • 1/2 tsp sea salt

  • 3/4 cup unsalted butter (melted) (or ghee/vegan butter)


  1. Preheat oven to 425F. Line a baking sheet with oil.

  2. Coat sweet potatoes fries with oil and sprinkle with salt. Bake for 20-25 minutes until fries are crispy. Flip fries half way through cooking

  3. Add oil to a pan on stove top. Add in onions and peppers and sauté for 5-7 minutes until onions are transparent. Remove from pan and set aside.

  4. In the pan, add in bacon. When bacon is half way done cooking coat in maple syrup. Once bacon is cooked set aside.

  5. Now you need to make the sauce. In a food processor, blend egg yolks, lemon juice and salt until it is a frothy mixture. Slowly pour in melted butter and blend until the sauce is thick.

  6. In a large mixing bowl toss together fries, onions, green pepper and bacon, then distribute onto a plate.

  7. On the stove top cook your egg type of choice. Add egg on top of fries. Pour sauce on top of egg and fries. Top with green onions.
