Grainless Spicy Pad Thai

The pad thai craving was real, so I whipped up this grainless Spicy Pad Thai.  I normally stick to the same recipe (on the blog), but decided to switch up this version a bit. It’s 100% gluten free, grain free & vegan with no shortage of flavour! This may look like a lot of ingredients, but you can actually put this meal together in 20 minutes or less… AKA the perfect weeknight meal!

Sauce Ingredients:
1 tbsp avocado oil
1 onion, chopped
1 clove garlic, crushed
1 carrot, spiralized or sliced
1 tsp fish sauce or sesame oil 
1 tbsp tamarind paste
3 tbsp water
1 tbsp hot sauce 
2 tbsp organic ketchup
2 tbsp nut or seed butter
1 tbsp maple syrup
1 tbsp fresh lime juice
1 tsp ginger, grated
Pinch dried red chilis

Walnut Meat Ingredients:
1 tbsp avocado oil
1/2 cup walnut pieces
1 tbsp water
1 tsp turmeric 
1/2 tsp ginger, grated
1 tsp dried parsley 
1/4 tsp salt

2 packs NuPasta

Sesame seeds


Sauce: Heat oil on the stove top. Sauté onion, garlic and carrot for 5 minutes. Add in all other sauce ingredients. Bring to a boil then turn down heat and let simmer for 5 minutes. Remove from stove top and set aside.

Walnut meat: Heat oil on the stove top. Add in all other ingredients and fry for 5 minutes stirring often.

Noodles: Prepare as directed on package or lightly sauté if spiralized.

Stir sauce into noodles, top with walnut meat, spouts, cilantro and sesame seeds.
