Grainless Strawberry Cheesecakes & Raw Peanut Butter Cheesecake (Raw)

Valentine’s Day is tomorrow! ?Have your decided what you’re making your sweetie?

 These Raw Strawberry Cheesecakes & Raw Peanut Butter Cheesecakes are a special treat that will fit in with any dietary needs. Best of all they are gluten free, paleo, vegan, refined sugar free. This recipe makes both!

Bottom Layer Ingredients:

  • 1 cup pitted dates

  • 1 cup chopped almonds

  • ¼ cup cocoa powder

Top layer Ingredients:

  • 1¼ cup cashews (soak in boiling water for at least 1 hour prior)

  • ½ cup coconut milk

  • 1 tsp vanilla

  • 1/3 cup coconut oil

  • ½ cup maple syrup (or honey/agrave nectar)

  • 8-10 fresh strawberries

  • ½ cup peanut butter (or any nut butter)


  • Strawberries

  • Raw cacao nibs


Bottom Layer

  1. Lightly grease a muffin sheet.

  2. Combine dates and almonds in the food processor. Pulse until both are broken apart and stick together.

  3. Split date/almond mixture in half.

  4. With one half of the mixture, distribute equally into the bottom of 6 of the muffin cups to be the base of the cheesecake.

  5. Place the other half of the mixture back in the food processor. Add in cocoa powder. Blend until fully combined.

  6. Line the bottom of the other 6 muffin cups with this mixture for the cheesecake base.

Top layer

  1. Combine soaked almonds, coconut milk, vanilla, coconut oil and maple syrup and blend in food processor until a smooth mixture

  2. Again, split the mixture in half. Place half of the mixture in a bowl , set aside. Leave the other half in the food processor.

  3. Add in strawberries to the food processor. Blend well then distribute the mixture evenly into the 6 bases in the muffin pan with no cocoa powder.

  4. Add the other half of the cheesecake mixture to the processor with natural peanut butter, blend well in the food processor. Once it is full blended, distribute the mixture evenly into the 6 bases in the muffin pan with cocoa powder added.

  5. Top Peanut butter cheesecakes with raw cacaos nibs. Top strawberry cheese cakes with strawberries.

  6. Place in freezer for atleast 30 minutes if serving right away. If waiting to serve store in freezer for up to a month and remove 15 minutes before serving
