Grainless Sweet Potato Hash Bowl



  • Ground black pepper
  • Pinch pink himalayan salt
  • Small bunch cilantro, chopped
  • 1 teaspoon lemon juice
  • 1 avocado
  • 2 eggs, poached
  • Pinch pink himalayan salt
  • 1/2 red pepper, chopped
  • 1 large sweet potato, grated
  • 1 small onion, chopped
  • 1 tablespoon avocado oil

Sweet Potato Hash


    1. Heat oil on a skillet. Add in onions and cook for 3-5 minutes until transparent. Add in sweet potato, red pepper and salt. Cook for another 10 minutes, turning often.
    2. While the hash is cooking, boil water and poach egg.
    3. Mash avocado well in a small bowl, add in lemon juice and salt.
    4. Assemble egg, avocado cream, cilantro and pepper on top of sweet potato hash.
