Grainless Tex Mex Salmon with Avocado Salsa

Here is another simple meal idea for those busy weeknights. Prep + cook time= 20 minutes! This recipe is gluten free, dairy free, paleo and nut free.

Tex Mex Salmon with Avocado Salsa Recipe

Yields: 2 Servings

Tex Mex Salmon Ingredients:

  • 2 salmon fillets

  • 1 tbsp chili powder

  • 1/2 tbsp cumin

  • 1/2 tbsp garlic powder

  • 1/2 tbsp salt

  • 1/2 tbsp dried pepper flakes

  • 1 tbsp avocado oil

Avocado Salsa:

  • 1 avocado

  • 1/2 medium sized tomato (diced)

  • 3 tbsp red onion (chopped)

  • 3 tbsp cilantro (chopped)

  • 1 tbsp fresh lime juice

Rice:

  • 1/2 head cauliflower grated

Directions:

  1. Preheat oven to 400F. Line a baking sheet with foil and grease with oil.

  2. In a small bowl mix together chili powder, cumin, garlic powder, salt and dried chili flakes. Use spice mixture as a rub for the salmon. Using hands coat salmon with spices.

  3. Place salmon on baking sheet. Bake for 12-17 minutes. Salmon is done cooking when it easily flakes off with a fork.

  4. While the salmon is cooking prepare avocado salsa- Mash avocado in a bowl, add in red onion, tomato, cilantro and lime juice.

  5. To prepare rice- Place grate cauliflower in a microwavable bowl. Do not add water. Heat uncovered in microwave for 3-5 minutes.

  6. When salmon is done cooking, remove from oven and top with avocado salsa and serve with rice.
