Grainless Tex Mex Taco Chili

Enjoy the taste of tacos without all the added grains! This chili is the so simple and is perfect when meal prepping for the week. I made this version on the stove top, but it could easily be made in the crock pot as well. This recipe is gluten free, dairy free, nut free, refined sugar free + vegan option.

Grainless Tex Mex Taco Chili

  • 2 tbsp avocado oil

  • 1 lb ground turkey

  • 1 medium yellow onion, chopped

  • 2 cans black beans, rinsed

  • 1 650ml jar salsa

  • 1 cup canned diced tomatoes

  • ½ lime, juiced

  • 2 bell peppers, diced

  • 1 jalapenos, chopped (optional)

  • 1 tbsp chili powder

  • 1/2 tbsp paprika

  • ½ tbsp cumin

  • ½ tbsp onion powder

  • ½ tbsp garlic

  • ½ tbsp oregano

  • 1 tsp salt

Topping Ideas:

  • Jalapeños

  • Cilantro

  • Red onion

  • Avocado

  • Nutritional Yeast

  • Shredded cheese

  • Plain greek yogurt or sour cream

  • Pinto Bean Chips

NOTE: To make vegetarian/vegan omit the ground turkey. Add an extra can of beans instead.

Directions:

  1. Heat a skillet with oil. Add in ground turkey and onions. Cook fully on medium heat for 7-10 minutes.

  2. Once cooked, transfer turkey and onion into a large pot. Add in black beans, salsa, tomatoes, lime juice, jalapenos, peppers, chili powder, paprika, cumin, onion powder, garlic,oregano and salt. Cover and bring to a boil.

  3. Once boiling, let simmer on medium-low for at least 20 minutes.

  4. Top with your favourite toppings and serve!
