So it’s almost lunch time – did you pack a lunch or are you buying? Buying everyday gets expensive (especially when eating grainless) and typically leads to unhealthy eating. Making your lunch is easy once you have a few solid recipes to switch up throughout the week! This one is a great grainless option for a lunch or snack:
Tuna Salad Bites
Prep time: 5 minutes
Cook time: 0 Minutes
1 can tuna
1 avocado, mashed
1 tbsp celery, chopped
2 tbsp red onion chipped
6-10 cherry tomatoes, chopped
Pinch salt and pepper
Cut cucumber into 3/4 inch slices.
In a bowl combine tuna, avocado, celery, tomato, salt and pepper.
Top cucumber slices with tuna salad and serve.
NOTE: When packing ahead of time prepare everything expect the avocado. Add avocado right before eating.
