Grainless Turkey Quinoa Soup

Not much is better than a warm bowl of soup on a chilly fall day. This soup is great to make in big batches and freeze for those hetic days when you need a quick meal. This recipe is gluten free, dairy free, paleo, nut free, soy free and refined sugar free.

Grainless Turkey Quinoa Soup

 Prep time: 10 minutes

Cook time: 20 minutes

Yields: 6 Servings

 Ingredients:

2 tbsp avocado oil

1 medium white onion, chopped

2 celery stocks, chopped

2 cups kale, chopped

10 cups Turkey broth

2 cups turkey, cubed

1 cup red quinoa

1 tsp pink Himalayan salt

1/8 tsp ground black pepper

1 bay leaf

1 tbsp thyme, dried

Directions:

  1. Sauté oil, onion and celery for 5 minutes on the stove top. Add in kale and cook for another 3-4 minutes until kale is wilted.

  2. In a large pot add in vegetables, turkey, broth, quinoa, salt pepper, bay lead and thyme.

  3. Bring to a boil, then let simmer for 20 minutes until the quinoa is fully cooked.
