Grainless Waffle-French Toast Sandwich

This is what happens when I can’t decide what to eat for breakfast. You won’t believe that this sandwich is completely grainless, gluten free, dairy free, nut free and refined sugar free!

Grainless Waffle-French Toast Sandwich

Prep time: 10 minutes

Cook time: 20 minutes

Waffle Ingredients:

  • 2 cups chickpea flour
  • 3 tsp baking powder
  • ½ tsp pink himalayan salt
  • 2 eggs, or flax eggs
  • 1 cup almond milk
  • 1/2 cup avocado oil

French Toast Ingredients:

  • 3 tbsp avocado oil
  • 2 eggs, beaten
  • ¼ cup almond milk

Directions:

  1. Preheat waffle iron.

  2. In a large mixing bowl combine all waffle ingredients.

  3. Once waffle iron is heated, brush with oil and pour half of the batter into it. Cook for approx. 4-5 minutes until golden.

  4. Remove cooked waffles and pour in remaining batter.

  5. Once the waffles are ready, heat a skillet on the stove top with oil.

  6. In a small bowl combine eggs and milk for the French toast.

  7. Coat each waffle with French toast batter, then place on skillet. Cook for about 5 minutes on each side.

  8.  Assemble sandwiches and enjoy!

2 flax eggs = 2 tbsp ground flaxseed + 5 tbsp water- let sit for 5 mins(or use regular eggs)

If the waffles are too dry, add in tbsp. amounts of milk into the batter.
