Lemon-Garlic Turkey Sausage Skillet

Looking for a simple weeknight meal? This Lemon Garlic Turkey Sausage Skillet is perfect for those busy nights. It is a colourful dish that is loaded full of flavour and only contains a few simple ingredients.

 This recipe is gluten free, dairy free, paleo, soy free and nut free. Make it vegetarian and vegan by substituting the meat for beans or tofu.


  • 4 turkey sausages

  • 3 tbsp avocado oil

  • 3-4 cloves garlic (crushed)

  • 1 medium yellow onion (chopped)

  • 1 medium sweet potato (diced into 1/2″ cubes)

  • 2 bell peppers (diced)

  • 1 medium zucchini (diced)

  • 12 asparagus stalks (diced)

  • salt and peppers to taste

  • 1/2 lemon (juiced)

  • 1 tbsp thyme


  1. Fully cook sausages on stove stop. When finished, sliced into pieces and set aside.

  2. Heat a skillet with 2 tbsp oil. Add in onions and garlic. Sauté for 3 minutes.

  3. Add in  2 tbsp oil, sweet potatoes, peppers, zucchini, asparagus, lemon juice, salt, pepper and thyme.

  4. Cover with lid and cook on low for 10-12 minutes, stirring occasionally.

  5. Add in sausage and cook for another 5 minutes.

  6. Heat for a few minutes longer if the vegetables aren’t fully cooked.
