There’s nothing I love more than a delicious, healthy treat that takes less than 10 minutes to prepare and only contains a few simple ingredients. Christmas is over and we’re now into the New Year, which means its time to get back on track. The key to healthy eating is taking a day to prepare for the week so you have meals and snacks on hand. I don’t know about you, but I love sweets so I always make sure to have healthy treats around for when I have a craving. These bliss bites are full of protein, plus are gluten free, grain free, dairy free, paleo, vegetarian, vegan, soy free and refined sugar free.
Raw Lemon Bliss Bites Recipe
1 cup raw almonds
½ cup raw cashews
¾ cup dates
1 lemon, juiced
1 tbs lemon zest
½ cup unsweetened shredded coconut
Add almonds and cashews in the food processor and then blend for about 1 minute until the nuts are in small pieces.
Add in dates, lemon juice and lemon zest. Blend for 1-2 minutes until fully blended.
Use your hands and roll into balls containing about 1 ½ tbsp of the “dough”.
Roll each ball into coconut until coated, and then roll the ball in your hands to press coconut into place.
Place balls on a plate and freeze for 30 minutes before serving. Store in fridge or freezer.
