Grainless Lentil Chili

Ingredients

  • 1 onion, chopped
  • 1/8 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 tablespoon oregano
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 2 cans diced tomatoes
  • 1 can kidney beans
  • 1 can lentils
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 carrot, chopped
  • 2 celery stalks, chopped
  • Pinch dried red pepper flakes

Instructions

  1. Heat oil in a large pot on the stove top. Add in onion, celery, carrot and bell peppers. Sauté for about 5 minutes until the onions are transparent.
  2. Add in lentils, kidney beans, tomatos, onion powder, oregano, garlic powder, cumin, salt, pepper and flakes
  3. Bring to a boil, then let simmer for 30 minutes.
  4. Top with cashew cream, df sour cream, plain Greek yogurt, cheese, nutritional yeast, avocado or any of your favourite toppings
