Grainless Spicy Pad Thai

Ingredients

Sauce

  • Pinch dried red chilis
  • 1 tablespoon avocado oil
  • 1/2 cup walnut pieces
  • 1 tablespoon water
  • 1 teaspoon turmeric 
  • 1/2 teaspoon ginger, grated
  • 1 teaspoon dried parsley 
  • 1/4 teaspoon salt
  • 2 packs Nu Pasta or spiralized sweet potato/zucchini
  • Spouts
  • Cilantro
  • 1 teaspoon ginger, grated
  • 1 tablespoon fresh lime juice
  • 1 tablespoon avocado oil
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1 carrot, spiralized or sliced
  • 1 teaspoon fish sauce or sesame oil 
  • 1 tablespoon tamarind paste
  • 3 tablespoons water
  • 1 tablespoon hot sauce 
  • 2 tablespoons organic ketchup
  • 2 tablespoons nut or seed butter
  • 1 tablespoon maple syrup
  • Sesame seeds

      Instructions

      Sauce

      1. Heat oil on the stove top. Sauté onion, garlic and carrot for 5 minutes. Add in all other sauce ingredients. Bring to a boil then turn down heat and let simmer for 5 minutes. Remove from stove top and set aside.

      Walnut Meat

      1. Heat oil on the stove top. Add in all other ingredients and fry for 5 minutes stirring often.

      Noodles

      1. Prepare as directed on package or lightly sauté if spiralized.
      2. Stir sauce into noodles, top with walnut meat, spouts, cilantro and sesame seeds.
