Roasted Lemon Garlic Beet Hummus

Check out that colour! If you’re looking for a lighter snack this Valentine’s day, give this Roasted Lemon Garlic Beet Hummus a try – beets are high in vitamin C and potassium, they also help detoxify the body.

1 roasted beet
4 cloves roasted garlic
1 can chickpeas, rinsed & drained
2 tbsp tahini
1/4 cup avocado oil
3 tbsp fresh lemon juice
2 tbsp lemon zest
1/2 tsp onion powder
1/2 tsp parsley
Pinch salt

Preheat oven to 375 degrees F. Lightly coat the beet and garlic in oil, then wrap in aluminum foil. Place on a baking sheet and roast for 40-50 minutes.
Remove from oven, let cool for 10 minutes then peel away any skin and chop into pieces.
In a food processor combine beet, garlic, chickpeas, tahini, oil. lemon juice and lemon zest. Blend until smooth.
Serve with your favourite veggies, crackers, bowls and sandwiches
