Spicy Cajun Jambalaya with Cauli Rice

Grainless Spicy Cajun Jambalaya recipe:

Serves: 4-5


  • 1 chicken breast

  • 6 sausages

  • 1 1/2 cups shrimp

  • 1 yellow onion (chopped)

  • 2 stalks celery

  • 1 red pepper (chopped)

  • 1 green pepper (chopped)

  • 1-2 jalapeño pepper (chopped) (don’t add if you don’t like spice)

  • 2 1/2 cups chicken broth

  • 2 small cans tomato paste

  • 3-4 tbsp cajun seasoning

  • 2 tbsp thyme

  • 1/2 tsp cumin

  • 1 large head cauliflower


  1. Cook sausage over stove top on medium heat. Cook for 8 minutes, then add in chopped up raw chicken and shrimp. Cook for 5-7 minutes, until chicken, shrimp and sausages are cooked. Remove sausages from pan. Slice up. Place all of the meat in a bowl and set aside.

  2. Now in the pan, add in 2 tbsp oil and onion. Cook for 5 minutes. Add in peppers, celery and jalapeño. Sauté vegetables for 5 minutes.

  3. Add in chicken broth, tomato paste, cajan seasoning, thyme and cumin.

  4. Bring to a boil. Boiled turn down to a low heat. Add in meat and let simmer for 10-15 minutes.

  5. In the meantime prepare cauliflower rice. Grate or very finely chop the cauliflower into rice size piece. Place in a microwave dish (don’t add water). Microwave for 4-5 minutes.

  6. Combine cauliflower rice and sauce/meat mixture and serve.

Alternatively: Serve over gf pasta, brown rice, quinoa etc.
