Sweet Potato Ginger Soup (+ an Awesome Deal From Daniel Wellington)


I whipped up a batch of Sweet Potato Ginger Soup, because there’s nothing like a warm bowl of comfort food on a snowy winter day!

3 tbsp avocado oil
2 yellow onions, chopped
1 1/2 inch piece of ginger, chopped
2 cloves garlic, minced
1 ribs celery, chopped
2 large carrots, chopped
2 large sweet potatoes, cubed
2 apples, peeled & chopped
6 cups vegetable broth
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp turmeric
1 tsp salt
Pinch dried chili flakes

In a large pot, heat oil over medium heat. Add onion, garlic and ginger. Cook until translucent for about 5 minutes.
Stir in celery, carrot, sweet potato, apple broth, cinnamon, nutmeg, salt and chilis. Bring mixture to a boil. Reduce heat and simmer for 30 minutes until the sweet potatoes are tender. Using a blender, purée mixture (in batches, if necessary).
