Thai-Style Pork Meatballs with Slaw and Peanut Sauce Recipe

Serves: 4 (if only making recipe #1)

Prep time: 15 minutes

Cook time: 20 minutes

 Pork Meatball Ingredients:

1 lb ground pork

½ carrot, chopped

1 tsp fresh ginger, grated

1 tbsp. cilantro, chopped

2 green onions, chopped

2 cloves garlic, minced

½ lime, squeezed

1 tsp dried chili flakes

1 tsp fish oil

1 tsp sesame oil

1 tbsp avocado oil (or olive oil)

1 tbsp honey

Slaw Ingredients:

½ Bag Coleslaw Mix

OR

1 1/2 cups green cabbage, chopped

1 cup red cabbage, chopped

½ cup carrots, julienned

+

3 tbsp fresh cilantro

2 tbsp avocado oil (or olive oil)

2 tbsp white wine vinegar

1 tsp honey

1 tsp sesame oil

½ lime, squeezed

Chopped peanuts (optional)

 Peanut Sauce Ingredients:

½ cup peanut butter (or any natural nut/seed butter)

3 tbsp coconut milk

1 clove garlic, minced

1 tbsp lime juice

½ tsp fish oil

 Directions:

  1. Preheat oven to 400F. Line a baking sheet with tinfoil or parchment paper.

  2. In a mixing bowl combine all of the meatball ingredients then roll into balls using 2-3 tablespoons for each. Place evenly on baking sheet and place in oven for 20-23 minutes, flipping half way though cooking.

  3. While the meatballs are cooking combine all slaw ingredients in a mixing bowl.

  4. To make Peanut Sauce whisk together all ingredients.

  5. Serve slaw and meatballs on a plate. Top with peanut sauce.

Okay – so I know that looks like a lot of ingredients, but check out how simple the directions are! Ingredients like sesame oil and fish sauce are definitely worth investing in because they last while and can easily liven up a meal. As for this next recipe, save it for a busy weeknight.
